Being a diabetic, you will probably be surprised the amount of sweets & desserts you will see me post over time. Rest assured, I do “try” to eat healthy and monitor my intake…but let’s face it, I am human…and I do succumb to temptation from time to time (within reason).
I saw this recipe posted by Tasty and I could feel my sugars shoot through the roof. I’m a cookie dough fan, tried and true. If any of my close friends would like to try the recipe (hint, hint), I would be more than gracious to help in the tasting process. *smile*
Here’s what you will need:
- 1 package pre-made cookie dough *optional* extra for topping
- 3 8-oz packages of cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1/2 tsp vanilla extract
- 3 eggs
Preheat oven to 350°F/180°C. Press a package of pre-made cookie dough into a springform pan. In a bowl, mix the cream cheese and sugar until fluffy. Add sour cream and vanilla and mix. Add the eggs, one at a time, mixing thoroughly after each one. Pour into springform pan. *Optional* drop half teaspoonfuls of cookie dough on top of the cheesecake batter. Bake for one hour, cool completely, then refrigerate overnight.
